Zucchini Relish Redux

Okay, my friends tell me I should have hot water bathed those jars of zucchini relish for 10 minutes. The recipe sites seem to agree. I haven't in the past and they have been fine but I don't want to make anyone sick so if you make it you should probably do it!

I will next time too.
